Sonne's apple-ginger soupIngredients:
3 medium apples
1/2 onion
1 tsp fresh ginger
1 dl white wine
50 g sugar
0,5 lt meat broth or water
0,5 lt apple juice, best usner freshly squeezed :-)
200 ml cream
some butter, salt, pepper
Preparation:
Cut apples and onions into small pieces and sauté in butter, add ginger, sugar and carmelize a little. Deglaze with white wine and add broth and apple juice, boil well, mix and strain. Finally, add cream to taste and thicken if necessary.
Garnish with a dollop of whipped cream and thin slices of dried Vinschger Paarl.

The delicious apple strudel
Ingredients:
1 pkg of puff pastry (approx. 250gr)
600 gr apples ...best Golden Delicious from Kalkgruberhof :-)
50 gr breadcrumbs
50 gr sugar
40 gr raisins
20 gr almond flakes
2 tbsp rum, 1 pkg vanilla sugar, 1/2 tsp cinnamon sugar
1 tsp BIO lemon peel, grated
1 egg for coating
additional: powdered sugar for sprinkling
Preparation;
Peel, core and cut the apples into small slices and mix with sugar, breadcrumbs, raisins, almonds, rum, vanilla sugar, cinnamon and lemon zest. Then roll out the dough and place it on a baking sheet lined with paper. Put the apple filling on the dough and fold it into the dough.
Brush the strudel with the beaten egg and bake in a preheated (180C ) oven for about 45 minutes.
Sprinkle with powdered sugar when serving. We serve the apple strudel with a delicious vanilla ice cream
Apple Tiramisù
Ingredients:
250 gr. mascarpone
70 gr. powdered sugar
200 gr. cream
1/8 l eggnog
½ l apple juice
4 sheets of gelatine
2 medium apples
100 gr. almond flakes
48 tiramisù cookies
1 tablespoon cinnamon sugar
Preparation:
Mix mascarpone with powdered sugar and eggnog, peel apples and cut into small cubes. Heat part of the apple juice and blanch the apple cubes and dissolve soaked gelatine leaves in it. After cooling, add everything to the mascarpone mixture. Whip the cream until stiff and fold in as well. Soak the cookies in the remaining apple juice and layer as for normal tiramisù. Finally, toast the almond flakes in a pan without fat, and spread over the tiramisù. Serve with apple pralines and cinnamon sugar.
